Plans for a major transformation of the Vineyard Restaurant included multi-level eating areas bordered by planter boxes of edible plants that could supplement kitchen ingredients. Due to the proximity to Port Phillip Bay, salt tolerant clipped hedges including Bay, Box, and Olive were chosen to shelter kitchen herbs.
